Webinar
Producing safe beef carcasses:
Pre- and post-slaughter strategies
As regulators increasingly shift the food-safety onus back to slaughterhouses, this webinar will offer integrated strategies for addressing pathogens on beef carcasses using best methods and technologies for pre-harvest, slaughter and chilling.
Pre-Harvest Animal Washing and Technologies
Dan Schaefer starts this full-cycle look at the carcass decontamination process by presenting methods and technologies aimed at the critical step of reducing pathogens on cattle prior to slaughter. His presentation is built around the efficacy of two hide-on carcass wash systems. He will also discuss and summarize the current status of new technologies such as vaccines, sodium chlorate and phages. More info
Kill-floor Carcass Decontamination Methods and Technologies
Dean Danilson will take the discussion onto the slaughter floor, where efforts to keep the carcass clean include applications such as thermal pasteurization and organic acid rinses. More info
Pasteurization Technologies Addressing the Chilled Carcass
Dr. Marsden will wrap up the seminar with a presentation on pasteurization technologies that address the chilled carcass. More info
